🏞️ Region and terroir
Santa Maria Farm is located in the Dipilto–Nueva Segovia mountain range, near the border with Honduras. The region is known for its high altitudes (1,300–1,600 m above sea level), mineral-rich volcanic soil, and a stable microclimate with warm days and cool nights.
This combination slows the ripening of the coffee cherries, allowing for the development of complex flavors and high bean density. The farm is surrounded by cloud forests and native vegetation that protect the soil and promote biodiversity – a key element of sustainable coffee farming.
👨🌾 Farmer and philosophy
Victor Robel is a passionate producer and innovator who continues his family tradition of growing fine coffee. His Santa Maria farm reflects the philosophy of "respect for the land, the people and the grain."
Victor emphasizes hand-picking, careful selection, and experimental processing – often working with smaller microlots to best express the specific character of each part of his farm.
It combines traditional methods with a scientific approach to fermentation, achieving top quality and a distinctly pure flavor profile.
🌞 Processing – Natural process
The ripe cherries are carefully sorted and dried naturally on raised African beds for 25-30 days. During drying, the cherries are turned regularly to prevent overheating and promote even fermentation.
This slow process enhances the fruit notes and brings a rich sweetness with a vinous depth to the cup. The Natural processing from Santa Maria is an example of precise work with fermentation without losing purity.
🌾 Harvest
The harvest takes place from December to March , when ripe cherries are picked by hand in several stages. Thanks to rigorous selection, only the highest quality fruits are dried, which guarantees the consistency and harmony of the resulting profile.
