🏞️ Region and terroir
Monte Cristo Farm is located in the Peñas Blancas region of the Jinotega department, one of Nicaragua's most important coffee regions. The mountainous terrain, constant fog, and fertile volcanic soils create an ideal microclimate for growing Arabica.
The excessive humidity and shade of tropical trees slow the ripening of the cherries, resulting in higher bean density and giving the coffee a full body and deep sweetness. The farm is surrounded by the Peñas Blancas Massif Nature Reserve, which is part of the Bosawás Biosphere Reserve – one of the largest protected rainforests in Central America.
👨🌾 Farmer and philosophy
Victor Robelo comes from a family that has been growing coffee for generations. His Monte Cristo farm is among the most respected producers in the region thanks to its emphasis on precision harvesting and innovative processing methods .
Victor combines traditional knowledge with modern practices – consistent hand sorting, working with microclimates and controlled drying allow him to create lots with an exceptionally clean and fruity profile.
🌞 Processing – Natural process
After hand harvesting, only fully ripe cherries are transported to Las Nubes Dry Mill , where careful natural processing takes place.
The cherries are dried for 35–40 days in shaded raised beds , which allows for slow fermentation and even drying.
This process brings out intense fruitiness and highlights the coffee's natural sweetness without losing the purity typical of the Nicaraguan terroir.
🌾 Harvest
The harvest takes place from November to March , when the cherries are picked by hand in several passes according to ripeness. Thanks to this, only the highest quality fruits enter the natural process - the basis for the resulting harmony of flavors and consistency in the cup.
