Coffee from Honduras is balanced, with a pleasant sweetness and medium to high acidity. It often offers flavors of ripe fruit, caramel, cocoa or nuts. Thanks to the diverse growing areas - from lowlands to high mountain regions - it can have a very diverse flavor profile. Honduras is now one of the most important producers of quality, premium coffee in Central America.

This coffee comes from families who diversify their income - in addition to growing coffee, they also engage in beekeeping and raise bee colonies on their farms.

The aim of the Capucas cooperative is to actively promote honey production among its members – coffee producers and beekeepers – and thus contribute to the economic stability and resilience of entire communities. Experienced beekeepers have access to new and better quality hives, while beginners receive beekeeping equipment and professional training. Special emphasis is placed on the involvement of women and young people, for whom beekeeping can be a new source of income and a way to actively participate in the development of the region.

And what about coffee itself? Thanks to the presence of more pollinators – namely bees – coffee trees and shade trees such as plums, bananas, pepeto and guama are better pollinated. The result is higher yields, which is an advantage for both farmers and us – lovers of quality coffee.

Ripe cherries are hand-harvested by men and women from the community, then collected at the farmer’s home and then transported to the cooperative’s wet processing station, where they are washed and dried. The drying takes place in COCAFCAL solar dryers that use renewable energy.

The coffee is dried for 15 to 22 days depending on the weather - the more sunny days, the faster the drying process, in cloudy weather the process slows down. During drying, the coffee is stirred regularly to ensure even drying and prevent unwanted fermentation.
