🌱 Region and terroir
In the heart of the high Uraga Mountains in Ethiopia’s Guji Zone lies the village of Yabitu Tume, known for its garden farms. Smallholder farmers grow coffee in small gardens around their homes, where the coffee trees blend naturally with the local vegetation – particularly Enset, Albizia and Acacia trees.
The high altitudes of 1,900–2,300 m above sea level, cool nights and fertile clay soils slow the ripening of the cherries, resulting in coffee with high sweetness, delicate florality and complexity typical of the best Ethiopian regions.
🏭 Yabitu Tume Processing Station
The Yabitu Tume Washing Station is one of the most reliable and high-quality stations in the Uraga area. While Uraga is famous for its growing number of stations, Yabitu Tume has long been among those that produce some of the best coffee in the region every year.
Basic characteristics of the station:
🧺 1. Cherry intake
The station works with a large number of small farmers from the surrounding villages. The growers supply only hand-picked, fully ripe cherries, preferably on the same day after harvest. Upon receipt, a secondary sorting is carried out to ensure that only the best cherries enter the process.
⚙️ 2. Processing technology
A disc depulper is used for peeling, ensuring a gentle and gentle removal of the skin. Fermentation takes place for 36-48 hours, under the supervision of experienced workers who control the fermentation process according to the temperature, aroma and texture of the parchment. This is followed by soaking in clean water, which contributes to the crystal clarity and precise structure of the resulting flavor profile.
🌞 3. Drying
The station has a number of raised African beds where the coffee is dried for 6-7 days. The drying process is slow, with regular stirring to prevent overheating or uneven drying. The local microclimate has a strong influence — stable wind flow and a balance between sun and cold allow for slow and controlled drying.
🌿 4. Sustainability and ecological practices
The station goes far beyond the usual standard: The cherry pulp is composted and used as organic fertilizer for local farmers. Wastewater from processing is discharged into sludge lagoons located a safe distance from watercourses. This system minimizes the environmental impact and protects local rivers from contamination. After drying, the coffee is stored in clean, well-ventilated areas with full traceability – from cherry receipt to final storage.
