🏞️ Region and Terroir

Bitta Farm Washed coffee comes from the Kaffa region in southwestern Ethiopia – an area widely regarded as the birthplace of Arabica coffee. It is here that, according to legend, the story of the shepherd Kaldi unfolded, who was the first to discover the invigorating effects of coffee cherries. Whether the legend is true or not, Kaffa is a place where some of the oldest genetic populations of coffee plants in the world still grow today.

Bitta Farm is located at an altitude of 1,900 to 2,050 meters amidst the ancient Kaffa Forest. Coffee plants grow here in the shade of native trees, in an environment with rich biodiversity, high rainfall, and fertile clay-loam soils. The cool mountain climate allows for slow cherry ripening, which promotes higher bean density, distinct sweetness, and extraordinary flavor complexity.


🌍 Kaffa – the birthplace of coffee

Unlike better-known areas such as Yirgacheffe or Guji, the Kaffa region long remained outside the main interest of global roasters. In recent years, however, thanks to investments in modern farms and processing stations, it is once again coming to the forefront.

Kaffa coffees are characterized by distinct sweetness, juicy fruitiness, and a delicately spicy finish. Thanks to its unique terroir, it offers a flavor profile that clearly distinguishes it from other Ethiopian regions and regularly achieves 85–87 SCA points.


👨🌾 Bitta Farm

Bitta Farm was established in 1993 with the aim of producing top-quality specialty coffee while protecting the unique natural heritage of the Kaffa region. Today, it covers an area of 912 hectares, a significant part of which consists of preserved native forest.

The farm exclusively cultivates Ethiopian varieties bred by the JARC (Jimma Agricultural Research Center) – specifically varieties 74110, 74112, 74140, and 8136, which are valued for their high cup quality and good disease resistance.

The farm also includes its own seedling nursery, an organic composting program, and the cultivation of the traditional Ethiopian plant Korerima (Ethiopian black cardamom), whose spicy aroma often appears in the flavor profile of local coffees.


🌱 Sustainability and Community Development

Bitta Farm is not only a coffee producer but also a significant employer and partner for surrounding communities. The farm employs approximately 115 permanent workers and during harvest creates jobs for another 380 to 510 seasonal employees. It also collaborates with surrounding smallholder farmers, providing them with coffee sales and expert advice on sustainable farming.

Investments also go into infrastructure development, building access roads, providing drinking water, and supporting education and healthcare in surrounding villages. Organic, Rainforest Alliance, and C.A.F.E. Practices certifications confirm the emphasis on environmental protection, transparency, and social responsibility.


⚙️ Washed Process

At Bitta Farm, processing is carried out with an emphasis on maximum cleanliness of flavor expression and preservation of the Kaffa terroir character.

Step by step

Selective Harvesting
Manual picking of only perfectly ripe cherries.

Sorting and Flotation
Upon arrival at the station, impurities and lower quality fruits are removed.

Pulping
Mechanical removal of the skin and most of the pulp.

Fermentation
Parchment coffee ferments in a controlled manner to naturally remove the remaining mucilage layer.

Washing
After fermentation, the coffee is thoroughly washed with clean water.

Drying
The parchment is dried on one of the 510 African drying beds, which allow for even airflow and slow drying while preserving aromatics. In addition to washed, the farm also produces natural and experimental lots.
