🏞️ Region and Terroir

Peñas Blancas SACHA coffee comes from the mountainous region of Acevedo in the southern part of the Huila department, which is one of Colombia's most renowned coffee-growing areas. The landscape here forms a mosaic of steep mountain slopes, deep valleys, and tropical forests, creating ideal conditions for cultivating specialty Arabica.

The coffee trees grow at altitudes between 1,600 and 1,900 meters, where the cooler mountain climate slows down the ripening of the cherries, allowing for their gradual saturation with sugars and aromatic compounds. The result is dense beans with distinct sweetness, complex structure, and exceptional purity of flavor.

The soils around Acevedo are rich in organic matter and minerals, which have accumulated over generations in the mountainous environment of the Colombian Massif. Combined with regular rainfall and ample sunshine, this creates a terroir that is the foundation for some of the best Colombian coffees today.


🌿 SACHA – Wild Forest

This lot was created as an exclusive Jakafe blend, composed of Caturra and Colombia varieties, which together create a harmonious and balanced flavor profile.

The name SACHA comes from the indigenous language used in the Andes and Amazon regions, where the word sacha means "wild forest" or "forest landscape." The name refers to the coffee's origin in the lush tropical nature of southern Colombia, where mountain cloud forests and fertile valleys create unique conditions for cultivating specialty Arabica.

SACHA thus symbolizes the connection between coffee, landscape, and the culture that has shaped Colombian coffee regions for generations.


👨🌾 Peñas Blancas – A Project for Farmers

Peñas Blancas Coffee Processing Center is not just a processing station. It is a community project created to provide small farmers access to state-of-the-art coffee processing and the international specialty coffee market.

The center is led by two progressive producers, Nestor Lasso and Jhoan Vergara, who are among the most respected figures in the contemporary Colombian specialty coffee scene. Their goal was to create a place where even smaller producers could use the same technologies and methods as the most successful farms in the region.

Thanks to centralized processing, farmers gain better quality control, higher purchase prices, and the opportunity to develop their farms long-term. Peñas Blancas has also become an educational center where producers acquire new knowledge about harvesting, fermentation, drying, and quality control.


⚙️ Washed Process

For the SACHA blend, only fully ripe cherries from producers collaborating with the Peñas Blancas station were selected.

After harvest, the cherries undergo thorough sorting and pulping. This is followed by controlled fermentation, during which the remaining mucilage surrounding the parchment bean is naturally removed. Once fermentation is complete, the coffee is washed with clean water and then slowly dried under carefully controlled conditions.

The emphasis on precise processing allows the terroir of Huila itself to shine through, preserving the purity, sweetness, and elegance of the resulting cup.
