🏞️ Region and terroir
Finca Las Flores is located in the southern part of the Huila region, in the municipality of Acevedo, near Pitalita – one of the most prestigious areas in Colombia for growing select Arabica.

The altitude of around 1,700–1,790 m above sea level brings a cool mountain climate, regular fog and slow ripening of the cherries. This results in high density of berries, strong sweetness and complex structure.

The soils are volcanic, rich in minerals, well-drained and exceptionally suitable for growing high-potential Arabica. The farm has a diverse vegetation – fruit and native trees provide natural shade, protect the soil and support biodiversity.

The Vergara family uses terraced slopes, micro-plots and different sun exposures to separate individual lots by variety, altitude and microclimate. The Aceveda terroir is known for its intense aromatics, bright acidity and juicy cup character.

👨🌾 The farmer and his story
Finca Las Flores is a family farm founded by Edilberto Vergara and Nubia Ayure in the early 1990s. They started with a small plot of land, but over the decades they expanded the farm and gradually included their children.
Jhoan Vergara, one of their sons, today represents a new generation of Colombian producers.

Known for his advanced approach to fermentation and innovative work with varieties, he and his family transformed Las Flores from a traditional farm into a producer of premium microlots and experimental coffees.

Jhoan is also active as a roaster and in 2019 he won an award in the international Master of Coffee competition in the farmer-roaster category. Today he is respected worldwide as a producer who combines science, practice and a sense of taste.
The family regularly invests in planting new varieties, infrastructure and processing techniques, and their work has inspired many farmers in Acevedo to discover the world of specialty coffees.

The Vergara family is among the producers who are constantly pushing the boundaries of Colombian processing.

This particular lot was processed using the washed method and the Red Bourbon variety was selected.

Red Bourbon is a rare and exceptional selection from bourbon lines, bred for its delicate sweetness, lively acidity and very clean cup. This variety is characterized by its deep cherry red color and even ripening. It thrives best at higher altitudes, where long maturation contributes to a consistently elegant flavor profile. It typically offers a strong and clean sweetness with structured citrus acidity, red fruit and caramel notes that are characteristic of bourbon varieties, and is grown in small microlots with an emphasis on precise post-harvest processing.


At Finca Las Flores, only fully ripe coffee cherries are hand-picked, dehulled and fermented with the pulp for 24-36 hours. After fermentation, the coffee is thoroughly washed with clean water and then dried on raised African beds in the shade to ensure even drying and preserve the aromatics. This washed method produces a clean, clear and balanced cup that highlights the natural sweetness and clarity of the variety.
