Brazil's coffee production accounts for approximately a third of all coffee production, making it by far the world's largest producer for the past 150 years. In central Brazil, the vast Cerrado savannah is punctuated by seemingly endless plateaus called Chapadas. These cover the states of Goiás, Mato Grosso do Sul, Mato Grosso, Tocantins and Minas Gerais, making them one of the largest coffee producing areas in the world.
This coffee comes specifically from the Sul de Minas region (southern part of Minas Gerais) from the Fazenda Mirante farm owned by farmer Pedro Gabarra. The total area of the farm is 102 hectares, of which 71 are intended for coffee cultivation. Since its establishment, it has placed considerable emphasis on producing high-quality coffee while improving the social and environmental impact of the farm. Some of their projects include improving waste management systems, providing environmental education in schools, and opening a farm to rehabilitate and release more than 900 animals (Project Wings). They also introduced solar panels in 2019 and finally achieved carbon neutrality certification in 2022.
After selective harvesting of ripe red cherries, these cherries are placed in oak barrels where they ferment for several days without access to oxygen. After fermentation, the cherries are placed on the terrace where they are dried in the sun.
