This beautiful lot comes from the El Limon farm of farmer Olmedo Córdova Neiro. The San Ignacio area, in which the farm is located, is home to varieties such as Bourbon, Pache and Pacamara. The farm is located in the Tabaconas district, at an altitude of 1550 m and has 2 ha planted with coffee. The location of the farm is truly exceptional, as its altitude, tropical climate and top quality varieties have created excellent conditions for the production of premium coffee.
Olmeda is an active member of the Cedros team and has recently focused on trends in coffee processing, such as controlled fermentation, with the aim of developing new and interesting flavor profiles in coffee.
Cedros team
Kooperativa de Servicios Múltiples Cedros Café (Cedros) was founded on May 10, 2013 in the Cajamarca region of northern Peru. This cooperative provides better and easier access to public and private funding and is actively involved in the development of new markets, contributing to the coffee social movement nationally and internationally.
Cedros Café operates in a diverse territory that includes the province of San Ignacio in the districts of Tabacones and La Coipa and the province of Jaen in the districts of Bellavista, Colasay, Huabal, Las Parias and San Jose del Alto. The cooperative plays a key role in connecting local farmers and families.
Process
After peeling, the coffee is fermented for 15 to 48 hours to remove the remaining pulp on the parchment and then dried for 12 to 25 days.
Encouraging quality
Cedros Café actively supports its members by offering premiums based on cup quality, providing basic farm infrastructure such as solar dryers and introducing modern equipment such as peelers and fermentation tanks. The cooperative strives to improve the quality of coffee through various initiatives that are complemented by hands-on training.
To ensure transparency of prices, bonuses, reimbursements and other forms of support provided to its associates, Cedros facilitates agreements through a democratic and transparent general meeting of its members. The distribution of benefits is collectively approved and then allocated according to consensus.
Jorge Carrillo Enrriquez, director of the cooperative, is heavily involved in overseeing all aspects of the operation. The administrative team seamlessly integrates administrative and operational functions and has dedicated accounting and quality control teams, each consisting of two people. The Quality Control (QC) department performs both physical and sensory evaluations to ensure traceability and adherence to coffee quality standards. In addition, a field team of three technicians/agronomists is responsible for on-site operations.
